I imagine it would be easier to crochet with than sheet fabric (which I've used to make a rag rug for out kitchen), but it will result in a very thick fabric.
Our kitchen mat is almost an inch thick (perfect for massaging aching feet whilst washing up), and I used 1½ inch wide strips of cotton sheets.

...and then what? How does t-shirt "yarn" knit up? Seems like it would be odd. Could you show an example of something knit with this stuff?
